I’m in nursing school and starting sewing as a hobby. I think it would be nice to have a set of scrubs as a pattern that can be customised to fit as many are not made for men or are extremely shapeless and expensive.
How does creating a new pattern work?

Let me start by asking, what would you be looking for in scrubs that is not covered by the existing designs? Keep in mind that many of the designs can create a wide array of patterns, just by tweaking options.
Now, to your question. It’s totally possible to create a new pattern (Or rather, design, in our terminology. A design is what you pick on the website, a pattern is what a design creates when you add your measurements and options). That’s how the existing ones ended up on the platform!
The tricky part is that FreeSewing is rather unique in how it handles designs. Every design is actually a just a pile of code (text) under the hood. If you are interested in going down that path, there is documentation for new developers (https://freesewing.dev/).
Good news is, you don’t have to necessarily have to do all that! Many of our existing developers are often more than willing to help turn your design into code, if you come up with the actual parametric part (how the design should be drafted based on which measurements).

It would be similar the T shirt designs already posted but with the slight V neck with the addition of extra pockets. They also normally include slits in the side and are slightly longer. As well as jogger like pants with additional pockets and draw string. As someone just starting it would just be nice to have adjustments to the pattern available.
Still starting this hobby, but the tools here should really help make scrubs that fit me well. Since most are not really made to larger men.
You can configure Toni to a v neck with the neck shape option. Adding pockets is probably pretty simple, I guess you can do it on paper, but if you wish to create a FreeSewing design with them we will be happy to help (and eg write the code if you provide the instructions).
In addition to what @jonathan_haas said, I think the extra length + split would be easy.
As for the pants, I think there would be a set of options for paco that should meet your needs?

Did I remember correctly that you can share options for a design because the options are encoded in the URL?
Is there a way to have a “Scrubs” option for a top & bottom pattern that a user could click to configure a “standard” scrub?
Yes, however that will also include measurements and stuff.
Not at the moment, but we discussed option groups/sets/presets or something like that before. Basically different styles for a garment that you can set from a list or something, and that preselect different options.

I suppose a scrub would also need more ease than a T-shirt because they’re made of woven material? Just guessing based on the way they look, as I’ve never worn them or made them.
Brings up an interesting philosophical question, which I’ve never thought about but I’m sure you guys have: at what point does a design require a new design rather than piling on options?
Is a woven garment fundamentally different from a knitted one? And other questions. It’s cool that you guys have already proven that garment designs aren’t fundamentally gendered, e.g. options for bulges and whatnot.
Correct, probably.
I think the point is when changing options isn’t sufficient enymore, e.g. because you’re adding parts in the new design. Otherwise, I don’t think there is a strict rule. For example Hannah is identical to Toni plus a hood with some adjusted option defaults. In the same way, you could make a scrub design that is just Toni + pockets + some different option defaults (like more ease).
Woven fabric frays and may need different handling of raw edges. Also e.g. for a t-shirt, stretchy fabric requires less effort e.g. fitting a bust, like it requires less shaping there because it can automatically shape due to the stretch.
